Spit Roasting Baby Goat

A WA baby Boer goat, 8-10kg, selected for the spit. Delicate, tender meat and a traditional centrepiece.

Cooking: Baste often with oil, lemon and herbs, as goat is lean. Spit for about 2.5-3 hours until the leg reaches 65-70°C. Rest 20 minutes.

Serving: Allow about 400g per person. Serves around 20-25.
