Lamb Shoulder Square-Cut

Cut from WA free-range lamb with rich marbling throughout, our shoulder rewards slow roasting. Cooked low and slow until meltingly tender, it falls easily from the bone.

Cook it whole, or ask us to cut it into 1.5 inch strips for peka, or dice it for curry.

We suggest 300-450g of raw meat on the bone per person. Expect 25-35% weight loss during the cooking process.
