Made from pickled pork shanks and boneless pork shoulder, boiled whole. Then deboned and flavoured with salt, pepper, coriander and bayleaf. Minced coarse and mixed with the broth which contains all the natural gelatine. Once filled into its casing and cooled it makes a beautiful brawn/ presswurst, cold-cut.
