Low N Slow Cuts Now at Eurostyle

At Eurostyle we love all things BBQ. For years we have been serving up the best local meat and sausages around for an Adriatic-style BBQ. Most commonly known as Peka/ Sacura or Gradele.

Both styles of cooking require a natural fire burnt off wood chips or coals. Gradele is a style of cooking where meat is cooked over a steel grate.

One of the most popular meals in Croatia’s Dalmatian region is the Peka. A blend of vegetables and meat drizzled with olive oil, sprinkled with herbs, and then baked to perfection under a bell-like dome in a deep dish.

For this style of BBQ customers prefer young, relatively lean, and tender cuts such as veal on the bone, pork neck, pork belly, lamb shoulder or middle, goat and chicken legs.

Thankfully living in Australia and being part of such a multicultural society, we have been exposed to many styles of BBQ from different regions of the world. Our smallgoods also attract customers from all nationalities. Whether it’s some traditionally made ham, speck or bacon, dry meats, black pudding, or a sausage similar to something from one’s motherland.

We have always endeavoured to embrace these cultures and adapt to service our customers.

South American cuts such as Rump Cap and Asado (beef ribs) are prepared by our butchers on a weekly basis. Our locally sourced yearling beef is perfect for Asado as South Americans like their ribs well-trimmed with not too much fat and nice tender meat.

The latest growing phase. American style ‘low and slow’ barbeque

In the last 5-10 years we have really seen a huge growth in American-style BBQ. Customers looking for specific cuts of Pork such as a Boston butt or St Louis-style Spare Rib. Beef from a larger carcase (more connective tissue) and high marble scores.

We have been fortunate enough to become friends with Chris from Urban Griller. Chris is one of the first people in WA to run a BBQ school. He also runs a BBQ forum and sells equipment. Through him we have been able to develop our range and properly educate our staff on customer requirements.

In our prepacked cabinet we now have a ‘Low n slow’ section* stocking Cape Grim Beef and Bass Straight. With a selection of Briskets, Short Ribs, Rump Caps, Beef Cheeks, Tomahawks plus more.
